El objetivo del presente artículo es analizar el papel de la termodinámica en la competencia perfecta en el mercado del café, especialmente desde la entropía, fenómeno descubierto por Rudolf Clausius físico de origen polaco, reflejado en la segunda ley de la termodinámica, que rigen la naturaleza sin importar el tipo de proceso o fenómeno a considerar, ya que, la física establece que, en cualquier sistema aislado, los cambios siempre provocan aumento de la entropía del sistema. Mientras que, la introducción de la entropía en el ámbito económico fue realizada por Nicholas Georgescu-Roegen en 1971, en su obra “La ley de la entropía y el proceso económico”, con lo cual se origina la economía ecológica o también llamada bioeconomía. El análisis se centra en el modelo del mercado de competencia perfecta de la economía neoclásica, en contraposición con la bioeconomía. Para desarrollar la presente investigación se utilizará la metodología del estudio de caso (mercado mundial del café), en tanto que, el problema a investigar se enfoca al debate de la hipótesis del funcionamiento eficiente de los mercados, sustentada por la economía neoclásica. Frecuentemente, esta metodología se suele utilizar para probar hipótesis o para demostrar que la hipótesis es falsa (Stake,1978). Siendo los principales hallazgos de los casos analizados del mercado del café, es el funcionamiento de mercados monopolistas y oligopolistas, poniendo en duda los preceptos del paradigma del equilibrio alcanzado por la competencia perfecta de la economía neoclásica.
